Perdix Wines is a family business that was established in 2012 by planting five grape varieties. Their first commercial production was in 2017. Influenced by the beauty of the flocks of partridges they would encounter close to the vineyards, they chose the word Perdix (Πέρδικα), which means partridge in Greek, as the name for their wines.

The Perdix Winery
The winery is directly adjacent to the old İzmir-Çeşme road, and while it is a contemporary building, it has a fascinating collection of antique furniture inside. The restaurant offers a tasting set of four or six wines and has a fine dining menu of Turkish and French-Italian dishes. Outside is a large grass lawn for summer seating and banquets with a seating area surrounded by a small pond and fountain. Below the main restaurant is a cellar and tasting hall.
Perdix Şarapçılık Viticulture
The vineyard area is approximately 5km south of the winery and has around 100 decares. The typical Aegean region climate prevails; the constant breeze and the temperature difference between day and night provide the necessary late ripening and aroma accumulation in excess. Their vineyards are located at an altitude of approximately 300m above sea level and coordinates 38 15′ 05.64” N 26 32′ 26.06” E. The olive groves and pine forests surrounding their vineyards also positively affect the grape quality.
The soil structure has organic matter that has, over time, flowed from the forested heights to a desired level; it is generally composed of clay loam and limestones that break off and decompose from the bedrock. As a soil reaction, the pH value is around 7.30, increasing below the surface to the lower horizons. They prefer irrigation modelling based on measuring water stress in regular foliar samples. In this way, the exact water requirements of their vines are determined. In addition, it can also avoid excessive or insufficient irrigation, which will adversely affect the quality.
In all of their vineyards, the above-ground pole height is two metres. In this way, there is no problem in creating the required green component canopy. The planting frequency is two metres between rows and one metre above the row. Monolateral (single-armed) cord and guyot training are applied, keeping the yield per grapevine to the required extent, and a product load that will adversely affect the wine quality is not allowed.
At Perdix, they produce wine from grapes grown entirely naturally in an organic way, ensuring complexity, high quality and long-lasting. Perdix uses several grape varieties to make its wines: Cabernet Franc & Petit Verdot, Boğazkere, Pinot Noir, Sauvignon Blanc, and Bornova Misket. Perdix, which entered the market as a boutique wine company with these five products, aims to become a wine company that sells across all of Turkey in the short term and to the world in the long term. Some grape varieties are sourced from outside vineyards, such as the Sauvignon Blanc, which is from high hills around Denizli.
Perdix Şarapçılık Wine Tasting
The Perdix Winery is the furthest west (nearest to Çeşme) of the Urla wineries, close to the town of Zeytinler on the old İzmir-Çeşme Road. It is only 1km from the Köstem Olive Oil Museum, which combines well for a relatively short afternoon day trip from Çeşme.
